World Pasta Day: celebrate with our new pasta shapes

I Fusilli Amalfi are long, winding fusilli that recall the curves of the Amalfi Coast. They're made with durum wheat semolina and water. Their rough surface, the hallmark of bronze-die extrusion, holds on to the sauce between the spirals, making them perfect for a ragù or a fish dish. The suggested recipe pairs them with beetroot and ricotta for a creamy dish with a vivid colour.

I Fiori Positano evokes the flower-covered terraces of Positano. Also made with durum wheat semolina and water, its petals catch creamy sauces beautifully, like a cream of zucchini, zucchini flowers and pistachios.

I Lemon Juice Fiori Positano, keeps the flower shape and adds the fragrance of Sorrento lemons. It's ideal with fish and light vegetable dishes, where the citrus note takes centre stage.

I Fiori alla Zucca has the shape of a four-leaf clover and the sweet flavour of pumpkin. It's made for creamy sauces and cheeses, as in the recipe with speck and cheese fondue.

Blossom recalls a cherry blossom and gets its soft pink tone from red beetroot. It's perfect with delicate sauces: ricotta and lemon zest bring out its sweetness.

Le Nuvole 4 Sapori are light and airy, with four flavours in a single shape: durum wheat, black carrot, spinach and beetroot. They suit light or creamy sauces, such as a Parmigiano cream.

La Christmas Pasta brings the colours of the festive season to the table, with seven Christmas shapes flavoured with spinach and tomato. A simple sauce is all it needs, like a four-cheese cream.

Frequently asked questions

What should I pair the new shapes with? It depends on the shape and the flavour. Long or spiral shapes, like the Fusilli Amalfi, work well with ragù and fish. Flower and cloud shapes (Fiori Positano, Fiori alla Zucca, Blossom, Nuvole 4 Sapori) are made for creamy sauces, cheese, ricotta and light sauces, which nestle into their forms. The flavoured shapes call for simple, delicate sauces that leave room for the taste of the ingredient.

How long do they take to cook? Between 7 and 9 minutes, depending on the shape. Christmas Pasta takes 7 minutes, Fiori alla Zucca and Blossom 8, and Fusilli Amalfi, Fiori Positano and Nuvole 4 Sapori 9.

Are the coloured shapes naturally flavoured?

What sets these shapes apart from ordinary pasta?

Do the flavoured shapes taste different? They have a subtle note of the ingredient that complements the sauce without overpowering it. That's why they're best dressed simply: a cream, some ricotta, a cheese.

How long do they keep? 36 months, stored in a cool, dry place.
