Carbonara Day: the dish that has conquered the world turns 10

For food lovers, 6 April is no ordinary date. The Carbonara Dayreturns, and this year it turns ten. Born in 2017 to protect the authentic recipe after the famous Carbonara Gate, the event promoted by the pasta makers of Unione Italiana Food has grown into a global phenomenon. On 1 April, as part of the tenth anniversary celebrations, Antonino and Mario attended the event organised by Unione Italiana Food, where the results of a survey carried out by AstraRicerche.
Italy's most beloved pasta dish — at home and abroad
Italian pasta accounts for one in every four of the 14 million tonnes of pasta consumed worldwide each year — and at the top of global tastes stands Carbonara. According to a survey conducted by Unione Italiana Food with Touring Club Italia , which mapped the pasta preferences of visitors across Italy's most popular tourist destinations.
What is striking is the growing curiosity that surrounds the dish: according to 7 out of 10 restaurateurs surveyed, the food culture of foreign customers has deepened considerably in recent years. Visitors increasingly ask about the origin of the ingredients (28%), the history of the dish (25%) and how it is made (14%).
Carbonara, with its handful of non-negotiable rules, has become the perfect entry point into Italian culinary culture for travellers from around the world.
The unwritten rules (but very clear ones)
Carbonara may be a popular, democratic dish, but Italians have very firm ideas about what must never be done. The gravest mistake, according to 34.9% of respondents, is adding cream — a taboo that has outlasted every culinary trend. Close behind is adding the egg too early, turning the cream into scrambled eggs (33.7%), then using onion or garlic instead of guanciale (31%), and finally substituting bacon for guanciale (23.5%). The recipe is simple, but the margin for error is watched very closely.
Carbonara comes in many variations
