Method Carnival Bolognese Lasagna?
Ingredients serves 5–6
- 500 g Lasagna per la famiglia (oven-ready)
- 500 g mixed ground meat (beef and pork) – or turkey/chicken for a lighter version
- 100 g diced pancetta (or smoked bacon if pancetta is unavailable)
- 1 medium onion
- 1 carrot
- 1 celery stalk
- 700 ml tomato passata (or smooth canned tomato puree)
- 300 ml béchamel sauce
- 100 g grated Parmesan (or Parmigiano-Reggiano)
- 50 g butter
- 2 tbsp olive oil
- Salt and pepper, to taste
- Nutmeg, to taste
- For garnish: parsley or basil leaves
Instructions to cook Carnival Bolognese Lasagna
- Prepare the meat ragù: Finely chop onion, carrot, and celery. Heat oil and butter in a large pan, sauté vegetables until golden. Add pancetta or bacon, then the meat. Brown evenly. Add tomato passata, salt, pepper, and nutmeg. Simmer for 30–40 minutes until thick and flavorful.
- Prepare the béchamel: Warm béchamel in a saucepan, add half the Parmesan and a pinch of nutmeg. Stir until smooth.
- Assemble the lasagna : Spread a spoon of béchamel on the bottom of the baking dish.
Layer: pasta, ragù, béchamel, Parmesan. Repeat. Final layer: generous béchamel and Parmesan.
Technical note: Maintain pasta-to-sauce ratio (40% pasta / 60% sauce) for a creamy texture - Bake: Preheat oven to 180°C (350°F, static). Cover for 20 minutes, then uncover for 15–20 minutes until golden. Rest 10–15 minutes before slicing.
